Keto Cabbage Noodle Beef Stroganoff

Ingredient List

Ingredients are for two servings:

Beef stroganoff

  • 220 g sirloin steaks or fillet, thinly sliced

  • 75 g (250 ml) mushrooms, sliced

  • 40 ml beef broth

  • 65 ml sour cream

  • 1 tablespoon (14g) butter, divided

  • salt and pepper

  • 20g red onion (half a small one), chopped

  • 1/4 (4g) tablespoon tomato paste


Cabbage noodles

  • 1 tablespoon butter

  • 180 g green cabbage, thinly sliced

  • salt and pepper

  • 1 tablespoon water

Preparation Steps

Beef Stroganoff

  • In a large skillet, melt two-thirds of the butter over medium-high heat. Add the mushrooms, seasoning them with salt and pepper. Sauté until they turn golden brown, about 5 minutes, then transfer them to a bowl.

  • Pat the beef dry and season it with salt and pepper. Add the beef to the hot skillet and cook until browned, about 5 minutes. Transfer the beef to the bowl with the mushrooms.

  • Add the remaining butter to the skillet and sauté the onion until it becomes translucent. Whisk in the tomato paste, then the broth, and bring the mixture to a simmer.

  • In a medium bowl, combine the sour cream with about ½ cup of the broth, whisking until smooth. Stir this mixture back into the skillet.

  • Return the mushrooms and beef, along with any juices, to the skillet and stir to combine.


Noodles

  • Meanwhile, in a large pot over medium heat, melt the butter. Add the cabbage, salt, pepper, and water.

  • Reduce the heat to medium-low and cook until the cabbage is tender. Serve topped with the beef stroganoff.
