Beef stroganoff
220 g sirloin steaks or fillet, thinly sliced
75 g (250 ml) mushrooms, sliced
40 ml beef broth
65 ml sour cream
1 tablespoon (14g) butter, divided
salt and pepper
20g red onion (half a small one), chopped
1/4 (4g) tablespoon tomato paste
Cabbage noodles
1 tablespoon butter
180 g green cabbage, thinly sliced
salt and pepper
1 tablespoon water
Preparation Steps
Beef Stroganoff
In a large skillet, melt two-thirds of the butter over medium-high heat. Add the mushrooms, seasoning them with salt and pepper. Sauté until they turn golden brown, about 5 minutes, then transfer them to a bowl.
Pat the beef dry and season it with salt and pepper. Add the beef to the hot skillet and cook until browned, about 5 minutes. Transfer the beef to the bowl with the mushrooms.
Add the remaining butter to the skillet and sauté the onion until it becomes translucent. Whisk in the tomato paste, then the broth, and bring the mixture to a simmer.
In a medium bowl, combine the sour cream with about ½ cup of the broth, whisking until smooth. Stir this mixture back into the skillet.
Return the mushrooms and beef, along with any juices, to the skillet and stir to combine.

Meanwhile, in a large pot over medium heat, melt the butter. Add the cabbage, salt, pepper, and water.
Reduce the heat to medium-low and cook until the cabbage is tender. Serve topped with the beef stroganoff.
