Ingredient List
2 eggs, large size
14g butter, for frying
25 g (60 ml) cheddar cheese
4 large mushrooms, sliced
salt and pepper
1 piece of Ketolicious flat bread
Preparation Steps
Crack the eggs into a mixing bowl and add a pinch of salt and pepper. Whisk with a fork until the mixture is smooth and frothy.
Melt the butter in a frying pan over medium heat. Add the mushrooms, stirring until they are tender. Pour the egg mixture into the pan, ensuring it surrounds the mushroom.
As the omelet begins to cook and firm up but still has some liquid egg on top, sprinkle cheese over it.
Using a spatula, gently lift the edges of the omelet and fold it in half. Once the bottom turns golden, remove the pan from the heat and slide the omelet onto a plate.
Serve with Ketolicious flatbread.
