Keto Cauliflower Tabouleh

Ingredient List

  • 75 grams cauliflower, grated into rice-sized pieces

  • 15g fresh parsley, finely chopped

  • 2 tablespoons (7.5g) fresh mint, finely chopped

  • 40g cherry tomatoes, diced

  • 1 small cucumber, diced (25g)

  • 1 tablespoon (8g) red onion, finely chopped

  • 1 tablespoon (14g) olive oil

  • 1/2 tablespoon (8g) lemon juice

  • Salt and pepper to taste

Preparation Steps

  • Grate the cauliflower to become very small pieces. Lightly steam or microwave the cauliflower pieces for 2-3 minutes until tender but not mushy. Let it cool.

  • In a bowl, combine the cooled cauliflower, chopped parsley, mint, cherry tomatoes, cucumber, and red onion.

  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to coat evenly.
