Ingredient List
75 grams cauliflower, grated into rice-sized pieces
15g fresh parsley, finely chopped
2 tablespoons (7.5g) fresh mint, finely chopped
40g cherry tomatoes, diced
1 small cucumber, diced (25g)
1 tablespoon (8g) red onion, finely chopped
1 tablespoon (14g) olive oil
1/2 tablespoon (8g) lemon juice
Salt and pepper to taste
Preparation Steps
Grate the cauliflower to become very small pieces. Lightly steam or microwave the cauliflower pieces for 2-3 minutes until tender but not mushy. Let it cool.
In a bowl, combine the cooled cauliflower, chopped parsley, mint, cherry tomatoes, cucumber, and red onion.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to coat evenly.
