Keto Eyes Eggs with Spinach & Mayonnaise

Ingredient List

  • 2 large eggs

  • 1/2 (7g) tablespoon butter or olive oil

  • 28g baby spinach or baby rocca leaves

  • 1 tablespoon mayonnaise, on the side

  • Salt & pepper to taste

  • 1 Ketolicious flat bread

Preparation Steps

  • Heat butter or oil in a frying pan over medium heat.

  • Crack your eggs straight into the pan. For sunny side up eggs, leave the eggs to fry on one side. For over easy eggs, flip the eggs over after a few minutes and cook for another minute. For harder yolks, let them cook for a few more minutes. Season with salt and pepper.

  • Serve with baby spinach or baby rocca, a dollop of mayonnaise, and Ketolicious flatbread.
