The Salad
60g skinless chicken breast
60g fresh spinach, rocca, or lettuce, or a mix of all.
1 tablespoon (14g) feta cheese, crumbled
35g cherry tomatoes, halved
30g cucumber (1 small one), sliced
1 tablespoon (10g) salad herbs & spices
The Dressing
1 tablespoon (14g) olive oil
1 tablespoon (15g) lemon juice
1 teaspoon (5g) balsamic vinegar
Salt and pepper to taste
Preparation Steps
Season the chicken breast with salt and pepper. Grill over medium heat until cooked through, about 5-7 minutes per side. Let it cool slightly, then slice.
In a large bowl, combine the fresh spinach, rocca, or lettuce, or a mix of all then add the cherry tomatoes, cucumber slices, and crumbled feta cheese and finish with sprinkling the salad herbs and spices over the mixed greens.
In a small bowl, whisk together the olive oil, lemon juice, balsamic vinegar, salt, and pepper until well combined.
Add the grilled chicken slices to the salad. Drizzle the dressing over the top and toss gently to combine, enjoy!
