Keto Grilled Chicken Spinach Salad

Ingredient List

The Salad

  • 60g skinless chicken breast

  • 60g fresh spinach, rocca, or lettuce, or a mix of all.

  • 1 tablespoon (14g) feta cheese, crumbled

  • 35g cherry tomatoes, halved

  • 30g cucumber (1 small one), sliced

  • 1 tablespoon (10g) salad herbs & spices

The Dressing

  • 1 tablespoon (14g) olive oil

  • 1 tablespoon (15g) lemon juice

  • 1 teaspoon (5g) balsamic vinegar

  • Salt and pepper to taste

Preparation Steps

  • Season the chicken breast with salt and pepper. Grill over medium heat until cooked through, about 5-7 minutes per side. Let it cool slightly, then slice.

  • In a large bowl, combine the fresh spinach, rocca, or lettuce, or a mix of all then add the cherry tomatoes, cucumber slices, and crumbled feta cheese and finish with sprinkling the salad herbs and spices over the mixed greens.

  • In a small bowl, whisk together the olive oil, lemon juice, balsamic vinegar, salt, and pepper until well combined.

  • Add the grilled chicken slices to the salad. Drizzle the dressing over the top and toss gently to combine, enjoy!
