125g Halloumi Cheese - Full Fat
100g Cherry Tomatoes
1 tablespoon (14g) basil, chopped
2/3 tablespoon (10g) olive oil
1 tablespoon (14g) vinegar
Salt
and pepper to taste
Preparation Steps
Slice the halloumi cheese lengthwise. You should get around 4 slices from half the block of halloumi cheese.
Slice the tomatoes in halves and finely chop the basil. Dried basil works, but fresh basil has more flavor.
Mix the basil, olive oil, vinegar, salt, and pepper to make the basil vinaigrette.
Place a nonstick pan over medium-high heat. Cook the halloumi slices for 1-2 minutes per side until golden.
Mix the tomatoes with the basil vinaigrette. Top the halloumi slices with the tomato mixture and enjoy!
