The Salad
40g Rocca Leaves
40g red onion, thinly sliced
60g Red bell pepper, thinly sliced
20g pumpkin seeds
4g Sumac
Balsamic Vinaigrette
2 tablespoon (28g) Olive oil
1 tablespoon (14g) Balsamic vinegar
1 tablespoon (15g) juice from a fresh lemon
Dash of white pepper
Salt & pepper to taste
Preparation Steps
Add all the salad ingredients to a large bowl.
In a medium bowl, add all the vinaigrette ingredients and whisk until fully blended. Alternatively, you can add them to a mason jar, close the lid, and shake vigorously.
Before serving, quickly mix the vinaigrette if it has separated, then drizzle it on top of the salad and toss to combine.
