Keto Rocca Salad & Balsamic Vinaigrette

Ingredient List

Please note that instructions are for 2 servings:

The Salad

  • 40g Rocca Leaves

  • 40g red onion, thinly sliced

  • 60g Red bell pepper, thinly sliced

  • 20g pumpkin seeds

  • 4g Sumac

Balsamic Vinaigrette

  • 2 tablespoon (28g) Olive oil

  • 1 tablespoon (14g) Balsamic vinegar

  • 1 tablespoon (15g) juice from a fresh lemon

  • Dash of white pepper

  • Salt & pepper to taste

Preparation Steps

  • Add all the salad ingredients to a large bowl.

  • In a medium bowl, add all the vinaigrette ingredients and whisk until fully blended. Alternatively, you can add them to a mason jar, close the lid, and shake vigorously.

  • Before serving, quickly mix the vinaigrette if it has separated, then drizzle it on top of the salad and toss to combine.
