Smash burger
150g ground beef, preferably chuck or (80% lean, 20% fat)
salt and ground black pepper
Roasted cabbage
80g green cabbage
1 (3g) teaspoon olive oil
salt and ground black pepper to taste
Guacamole
1/2 (50g) ripe avocado
1/3 (5g) tablespoon olive oil
10g white onion, finely chopped
Squeeze of lemon
15g tomato, diced
10 ml (1 g) fresh cilantro, finely chopped
1/2 teaspoon garlic powder
salt and pepper, to taste
Preparation Steps
Smash Burger Preparation
Divide the ground beef into two balls per serving, each weighing 75g.
Heat a large frying pan over high heat until it is smoking hot.
Place the meatballs in the hot pan and press them down with a grill press, spatula, or the bottom of a glass until they are less than 1 cm thick.
Season generously with salt and pepper.
Fry for about 2 minutes on each side or until the burgers develop a nice brown crust.
Roasted Cabbage Preparation
Preheat the oven to 200°C.
Cut the green cabbage into long wedges and remove the thick stem in the middle.
Slice the wedges into small pieces around 3 cm wide and place them on a baking sheet or in a large baking dish.
Season with salt and pepper and drizzle with olive oil.
Bake for 20 minutes or until the cabbage is roasted.
Guacamole Preparation
Peel the avocados, cut it into small pieces, add the olive oil and mash the mix with a fork.
Add the onion, lime juice, tomato, cilantro, and garlic powder.
Season with salt and pepper, and mix until well combined.
