Ingredients are for 2 servings:
1 cup (60g) fresh parsley, finely chopped
1/2 cup (30g) fresh mint, finely chopped
1 cup (150g) cherry tomatoes, diced
1/2 cucumber, diced (100g)
1/4 red onion, finely chopped (30g)
1/4 cup (30g) chopped almonds (as a bulgur substitute)
3 tablespoons (42g) olive oil
2 tablespoons (30g) lemon juice
Salt and pepper to taste
Preparation Steps
Finely chop the parsley, mint, cherry tomatoes, cucumber, and red onion.
In a large bowl, combine the chopped parsley, mint, cherry tomatoes, cucumber, red onion, and hemp hearts or chopped almonds.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the salad and toss to coat evenly.
Serve the Keto Tabouleh Salad immediately, or refrigerate for a few hours to let the flavors meld together.
